I have a whole folder of bookmarks on my browser with the title “recipes”. Some are really rather complicated to make (but look wonderful); others provide the inspiration for the things I cook on a regular basis.
But tonight’s meal is top of my bookmark list because it is unbelievably simple and utterly delicious. It’s from Anna Jones, who is a wonder at coming up with innovative ideas for vegetarian and vegan cooking – but even if you’re neither of those, you must try this dish. It’s one of the best pasta dishes I’ve ever eaten (and I’ve eaten a LOT of pasta).
Chilli flakes and basil are delicious added to this. I also happened to have some prawns, one time, and added them at the same time as the kale/spinach.
Finally, this recipe is incredibly easy to halve or even quarter, so don’t feel like you have to have three other people in order to make it.
Oh and it’s delicious as a packed lunch, too.
